Calcium acetate (E263) is a food additive from the preservative group. It is used to extend shelf life, regulate acidity, and strengthen the structure of plant-based foods. It is available as an amorphous or crystalline substance with a light vinegar odor.
It is produced by reacting calcium carbonate or calcium hydroxide with acetic acid.

Calcium acetate can soften the sharp acidic taste of acetic acid in many foods. It’s also used as a melting salt and a firming agent for plant tissues.
In practice, sodium or calcium diacetate is more commonly used in the food industry. Both are effective against bread spoilage caused by Bacillus mesentericus, also known as "rope spoilage."
