Emulsifiers are food additives that are used to prevent the separation of solutions. For example, if you need to mix water and oil and, as you know, these substances have different densities and they do not mix well with each other, then emulsifiers are needed to get a homogeneous liquid. According to the European E-numbering system, emulsifiers are designated from E500 to E599.
