Product description:

Nisin (E 234) is a natural peptide antibiotic produced by the microorganism Streptococcus lactis. Structurally, it belongs to the class of lantibiotics and is closely related to other peptide antibiotics such as subtilin, cinnamycin, and duramycin.

Powerful Antimicrobial Properties

Nisin is widely recognized for its ability to inhibit the growth of gram-positive bacteria, including Staphylococcus spp., Streptococcus spp., spore-forming bacteria, and certain acid-resistant strains. This makes it an effective preservative for extending the shelf life of a wide range of food products without compromising quality.

Safe and Effective Preservation

As a food-grade preservative, Nisin (E 234) not only combats harmful microbes but can also reduce the intensity or duration of heat treatment required during food processing. This helps to retain vital nutrients in food. For example:

Vitamin C loss is reduced by up to 30–35%

 Beta-carotene remains fully preserved

However, like all antibiotics, Nisin may affect beneficial bacteria if consumed in large quantities. Responsible use is recommended to maintain a healthy balance in the human microbiome.

Versatile Applications

Nisin is widely used across the food industry thanks to its effectiveness and natural origin. Typical applications include:

  • Cheesemaking

  • Preservation of meat and dairy products

  • Canned vegetables (green peas, beans, mushrooms)

  • Vegetable oils

  • Condensed milk

  • Confectionery products

Other Notable Uses

In addition to food preservation, Nisin is also used in:

  • Wine maturation processes

  • Medical applications as an antimicrobial agent

  • Transport of dairy products to prevent spoilage

  • Production of cheese and sausage casings
