Thickening and bulking agents

Thickening agents are added to the product to increase the viscosity without greatly modifying the properties of the product. Thickeners also improve the stability of emulsion or solution by suspension of other ingredients. There are also thickening agents that form a gel by creating a  weakly cohesive internal structure. Bulking agents are added to increase its bulk volume without increasing the nutritional value. Thickening and bulking agents are responsible for shape, structure and appereance of the final product.
