Gum arabic (food additive E414) is a soluble gum, a solid, transparent mass. Otherwise this additive is called acacia gum, because it is extracted from the trees of some species of acacia. Also, gum arabic is sometimes made from arboreal juice of apricot or plum. The resin is peeled off the bark of the trees and ground to a white powder.

Gum arabic is a complex mixture of glycoproteins and polysaccharides.

Gum arabic is molecularly elastic, it easily distributes particles of fats in products, retains moisture well, can regulate the freezing point. In the food industry, the E414 additive is used as a texturizer, an emulsifier, a film former, a defoamer and an emulsion stabilizer.

The additive E414 dissolves very well even in cold water, resulting in a slightly mildly acidic solution. Due to this property, gum arabic has long been used for industrial purposes, for the production of adhesives. But polymer research continued, and the polymer industry continued to develop, so gum arabic began to lose its importance in this use.

When the solution of E414 is boiled, various sugary substances are formed in it, so now gum arabic is widely used in food production.

In the confectionery and bakery industry, the E414 additive prevents sugariness, formation of lumps and foam, but at the same time completely preserves the taste of the product (for example, in the production of cookies, sweets, pastes, glazes, etc.).

In the dairy industry, the emulsifier E414 is used in the manufacture of yogurt, ice cream, cream, creams. Usage of gum arabic can increase the volume of the product, prepare a stable emulsion.

Also as an emulsifier, gum arabic is used in the production of carbonated alcoholic and non-alcoholic beverages.

Other uses of gum arabic:

in medicine, in the manufacture of painkillers and some other medicines;
widely used in the production of ink;
one of the components for dyeing fabrics, leather processing;
is used in the production of ceramics;
It is used in easel painting, being a binder for dry components (second in quality, after egg yolk).
